As I’ve been catching up on Young & the Restless and working on things like Mod Podge pumpkins, I keep seeing the Denny’s commercial for their pumpkin pancakes and I drool. every. time. I mean, pumpkin whipped cream with cinnamon? Yes, please! So I decided that I’d have to make some for Faith and the daycare kids at some point, and I finally got it done for lunch today (with plenty of leftovers for breakfast tomorrow)!
I made pumpkin pancakes one other time and I wasn’t as impressed with that recipe (for reasons I don’t remember), so I searched Pinterest today for something different. I figured I could spot one that would turn out delicious, and I picked well because these pancakes from Chef in Training are fabulous and it made a nice big batch!

They are fluffy and moist and pumpkin-y (that’s a word!) and wonderful! We used real maple syrup rather than a glaze, but when I have more time (and whipping cream) I intend to create some pumpkin whipped cream and give that a try! There’s just something about pumpkin everything this time of year, and these pancakes should be on your to-make list!
