For I think as long as I’ve done daycare, I’ve tried to participate in some St. Patrick’s Day festivities (and all the holidays)…more so than just wearing green and calling it good. 😉 For the past two years, we’ve had a mischievous leprechaun visit our house, and the only reason we know he’s been here is by the green “pee” left in the toilet bowl. The kids come running out yelling, “Guess who peed in the toilet???!!!”. (Just a little green food coloring and the leprechaun can visit you, too.)
Several years ago I decided to give corned beef and cabbage a try. I hadn’t ever had corned beef (that I was aware of), but decided to try this recipe that I saw Bobby Flay do on the CBS morning show one year…and I’ve done it ever since. It’s A-MA-ZING. This year I wanted to try a crock-pot version of corned beef and cabbage (for simplicity’s sake), but I just couldn’t bring myself to do it. This recipe is THAT good. I mean, anytime you cook meat in bacon fat and then use the bacon in the vegetable, how can you go wrong?? I figure I only do it once-a-year so I should really enjoy it, right?! You can access this recipe here. I no longer make the sauce (not needed) and the only seasoning I use on the corned beef is the packet that comes with it.
