It’s been about a year since I taught (or took) Jazzercise, and the lack of workouts has certainly taken its toll on my waistline. I was still doing fairly well leading up to our wedding last December, but since then the weight has gradually creeped its way back…and I decided it wasn’t creeping up the scale any more!!!
My favorite “diet”, if you want to call it that (seems like such a bad word these days), is the South Beach Diet. (I prefer to look at it as making better food choices.) I think many think of South Beach as a low-carb diet, when the reality is that while it sort of starts out that way, it is ultimately just a healthy lifestyle change that focuses on low-sugar and whole foods. Besides being very nutritious and a great way to lose weight, my former OB-GYN recommended it for PCOS (polycystic ovarian syndrome), which is just one of my infertility issues. Since I would also like to have another baby, I figured it was time to go back on The Beach!
This past year I’ve really gotten into drinking coffee, and sadly am starting to rely on that caffeine boost to get through my daycare day. I prefer a cold coffee drink in the summer, however, and was thrilled to stumble upon a couple South Beach recipes on Pinterest and the South Beach Dietwebsite: one for Iced Vanilla Coffee and the other for Chilly Chocolate. While they are both delicious the way they are, I wanted to concoct a South Beach friendly iced mocha, so I combined the two recipes. Here’s my recipe:
South Beach Diet Friendly Iced Mocha
Brew 3 cups of coffee (strong) and let the carafe cool a bit (don’t want to break your pitcher or you’ll really have a bad day!)
Mix 3 T cocoa powder with 2 T sugar substitute (I’m using Stevia in the Raw), as well as a pinch of salt. Add 1 cup cold milk and whisk until smooth. Add 2 additional cups milk and 1-2 tsp vanilla extract. Pour into pitcher and add coffee. Stir. Pour over ice and top with 2 T Cool Whip (fat free…also have used Light), and stir some of the Cool Whip into the drink.
Grab some pistacios or another good protein snack (or not), put the kids down for nap, and ENJOY!!!
